In the heart of the Stockholm archipelago is Ostmakeriet on Rindö. Here Anna Kälvebrand has been making artisan cheeses in the small dairy next to Oxdjupet and the Oscar Fredriksborg Fortress since 2012. It all started after a friend talked about food crafts and Anna discovered that there was a shortage of cheese makers in Stockholm. Once the idea was born, everything went quickly. A local was found, she came into contact with a dairy farm and began her journey as a dairyman.
Since its inception, Ostmakeriet on Rindö has grown rapidly and won a number of awards for its cheeses. The milk is collected by Anna and her husband at Öster Grytinge Gård. She then refines it into cheese before it is stored and sold in her own cheese shop in the dairy building. Her favourite is the cave-stored cheddar cheese Oscar Fredrik which she has been allowed to store inside the old adjacent fortress.
“The advantage of cheese is that there is an infinite variety of varieties to explore and that there is always something new to learn. I tried a cave-aged cheese at a cheese tasting and was so impressed with the taste that I decided to try making one myself.”
In addition to the production of about ten cheeses and its own shop Ostmakeriet on Rindö also has a summer cafe and organizes cheese tastings. For a few years now, they also produce ice cream with the milk. Among other things, the award-winning whey sorbet is made from whey left over from cheese production. It was precisely the production of ice cream that prompted Anna to turn to Froda.
“It's a big investment to start making ice cream. Ice cream makers, freezers and freezers are not cheap stuff. In order to make that effort, we needed funding. Otherwise, it would take way too long to get started on it.”
Why did you choose Froda?
“I was at a lecture where a woman from Froda was talking and then I felt that this sounds like me. As a small business owner, you feel a little small at the big banks and you always need to have a lot of other things in your back to be able to get a loan. But with Froda, the process is simple and straightforward. Froda makes it easy to be an entrepreneur and I feel valued both as an entrepreneur and as part of a community.”
What does the future look like for Ostmakeriet at Rindö?
“It's still a bit bad with communication if you don't have a car so many people don't get out to Rindö. We want more people to enjoy our cheeses and ice creams so we have just opened a pop-up shop inside Vaxholm. We thought that if people don't come out to us, we might bring some good cheese and ice cream to Vaxholm. It is probably a bit of a plan going forward, to increase operations towards the mainland.”
